We’ve also pulled together some exciting recipes for you to create, using Whitby Seafoods products and Jackson’s bread. Read on for some sumptuous ideas…

Fish Goujon Butty

You can’t beat a good ol’ fish butty. Use a pack of Whitby Seafood Fish Goujons and cook them to the packet instructions. Whilst waiting, take one of our hand-finished white bread rolls, slice it in half and spread with butter.When your goujons are cooked, add these to the roll, add a bit of salt and vinegar and voila – a bloomin’ good fish goujon sandwich! If you’re feeling extra adventurous, why not add a dollop of Gin & Tonic tartare sauce (yes you heard that right!). See below for the recipe…

  • 200ml mayonnaise
  • 3 tbsp capers (drained & chopped)
  • 3 tbsp gherkins (drained & chopped)
  • 3 tbsp fresh parsley (chopped)
  • 1 small chopped shallot
  • A squeeze of lemon juice
  • Salt & pepper to season
  • Splash of your favourite Yorkshire gin

Scampi and Mashed Peas on Toast

Scampi and mushy peas are a great combination and everything tastes better on a slice of bloomer toast so we’re sure this recipe will be a real crowd pleaser. Plus it’s super easy to make so is a great snack option.

Oven cook some Whitby Seafoods Whole Scampi as per the packet instructions.

Whilst you wait, simply add frozen peas to a bowl of boiling water and leave to stand for 2-3 minutes. Using the back of a fork or a potato masher mash the peas add a drizzle of rapeseed oil, some lemon zest and chopped mint and stir through.

All that’s left to do is toast your Jackson’s brown bloomer and pile on the scampi and peas and dive in!

Lemon and Pepper Goujon Bruschetta

We’ve decided to put a Yorkshire twist on an Italian classic, with Whitby Seafoods Lemon & Pepper Goujons, to create some delicious bruschettas.

Grab yourself a bag of Whitby Seafoods Lemon and Pepper Goujons, place on a baking tray and cook to packet instructions.

Next, preheat your grill and grab 2 slices of Jackson’s White Bloomer bread. Drizzle with a little bit of olive oil, making sure the bread is completely coated; you don’t want burnt bread! Place under the grill until crispy, then remove. If you’re feeling fancy, take a garlic clove and rub this all over the bread to add a little extra flavour.

Once the goujons are cooked, stack these on top of the bread and serve with a little bit of side salad – this is perfect as a starter for a romantic night in.
